Observed squeeze bottles and storage containers of sauce with no datemarking as required. All TCS ready to eat foods were datemarked during this inspection. Ensure consistent datemarking of all TCS ready to eat foods at all times. The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewash sink was 0ppm, rather than 200-400ppm as stated on the manufacturers use directions. A soap container was erroneously installed in the automated sanitizer dispenser system. A new container of sanitizer was installed during this inspection; observed 200ppm. Comply at all times. Clean all equipment touch points. Clean under and behind food service equipment including around grease trap near the 3-bay sink. Observed metal wire pad and food debris inside the hand sink located in the front food prep area. All hand sinks must be easily accessible at all times and free of food debris.

Ensure all reheating of bacon is completed in small batches to limit grease laden vapors. At the bar, the 3-door kegerator holding TCS foods (half & half, juices, etc) had multiple foods measured at 42°F, rather than 41°F or below. Unit must be adjusted or repaired to hold foods at 41°F, or foods must be held in a working unit. For today, foods were moved to a working refrigerator. Inside the walk in, the air temperature was initially at 48°F, rather than 41°F or below as required. Foods were measured at between 41°F-43°F. Foods did not need to be discarded, but the unit must be repaired. Temperatures were immediately brought down by leaving the door to the connecting walk in freezer open (ambient temperatures were at or below 41°F by end of inspection). Refrigeration repair was called and arrived during the inspection. If the unit cannot be repaired by the end of the day, all TCS foods inside the unit must be moved to a working refrigeration unit or discarded. TCS foods on the cook line, held in ice, had portions of the food containers held above the ice. Food below the level of the ice was 41°F and food above the level of the ice was 45°F. Additional ice was added to fully surround all food containers. Foods above 43°F must be discarded. In the bar and walk in refrigerator, multiple TCS foods (foods requiring refrigeration) were held for over the 7 day limit and needed to be discarded. All foods held for over 7 days were discarded. Food facility is using reduced oxygen packaging for foods without the required written procedures and HACCP plan. Stop vacuum packaging unapproved foods immediately. The following pieces of equipment need to be cleaned and sanitized: The nozzles of the kitchen soda dispenser; The inside of the kitchen ice machine chute. The inside of the bar 3-door kegerator has some spills on the bottom and shelves that need to be cleaned. Outside dumpsters had their drain plugs removed. Ask the dumpster company to replace the drain plugs. Bar hand sink was not stocked with paper towels. Paper towels were brought to hand sink during inspection. Bar hand sink did not have a sign posted reminding employees to wash hands. Place a sign at this sink within a week.

The sink was drained and instructions were given on how to use a gallon pitcher to measure how many gallons it will take to fill the sink to the proper level which will then verify how many Steramine Tablets to use since instructions state one (1) per gallon. The amount of tablets must be posted on the wall above the sink today. Also, the sink was found improperly marked with a fill line sticker. This sticker was placed too low on the sink to allow for the proper depth to sanitize dishes. Remark the sink with proper level of water in accordance with how many tablets required. Correct today. The dumpster/waste handling unit outside does not have tight-fitting lids or covers-they are bent/askew. Replace before 8/23/24.

Dripping water may contaminate foods. Until unit has been repaired to no longer drip water, clean water at the bottom of the fans, and move food away from areas where water can drip. In the walk in and in the chest freezer next to the water heater, multiple containers of food were either uncovered or only partially covered. All foods must be stored covered, to prevent contamination. A very large container of raw chicken had been removed from the walk-in to be cooked at the beginning of the inspection. About 20 minutes after being removed from the walk in, the chicken temperature was at 45°F. To minimize the amount of time that TCS (potentially hazardous) foods are above 41°F, only take small amounts of chicken from the walk in at a time. After being cooked, the chicken must be served or quickly cooled to 41°F or below. The remaining raw chicken was brought back to the walk in to cool back down to 41°F or below. In the walk in, multiple foods that are opened or made on location are being held for over 24 hours without being date marked. Date mark all opened or prepared foods that are being held for over 24 hours before being used. In the walk in, the walls, floors, and shelves have some grime building up and need to be cleaned. Food-contact equipment is not being cleaned properly. Dishes are being sanitized before they are washed. The three-compartment sink must be properly set up for equipment washing and the four-step process followed to clean equipment: WASH equipment in hot soapy water in the right-side compartment; RINSE equipment in the middle compartment; SANITIZE equipment in a sanitizing solution in the left-side compartment; AIR DRY equipment on the left-side drain board. Outside dumpster had been left open and was attracting flies. Close dumpster when not in use. Dumpster was closed. Within a week, the lights need to be replaced or repaired in the following areas: One light over the hood is out; The walk in light is flickering and will not stay on. The floors of the kitchen need to be cleaned, especially underneath and behind equipment, underneath shelving, and behind chest freezers. The food facility does not currently have a Chester County Health Department certified employee. An employee has attended an approved training class, but does not have the Chester County certificate. Within a week, turn in the CFM application, the application fee, and a copy of the valid Servsafe certificate.

Observed a buildup of biofilm along the ice chutes of the ice machine, a food contact surface, in the kitchen and the basement. Clean and sanitize these machines immediately to prevent potential contamination. Clean the following: Hood filters of grease buildup to allow better filtration; Sides of grill and deep fryer of any dripping grease; Under and behind large kitchen equipment of any food debris buildup. Observed the hand sink in the bar area blocked by rags and trays. The hand sink must be used for handwashing purposes only. Person in charge removed the items from the sink.
